    can anyone tell me how do people work out the percentages of which is a better hand between two players etc.

    Use a poker calculator like this one

    Type in a few examples, and learn the odds by rote, the percentages will slighly differ depending on the exact cards/suits but theyll be close enough.

    Preflop I think there are just 8 basic situations to know.

    Pair v UnderPair.
    Pair v Overcards.
    Pair v Undercards.
    Pair v OverUnder (77 v A4).
    Dominated hand (KQ v K7).
    Overs v Unders. (AQ v J7).
    TopBottom v Middles (A8 v KJ).
    Interleaved (A8 v K4).
