I am thinking of changing careers and am hoping to get into the field of outdoor education. Anybody here got any experience in this area or know of some good courses?

I have some friends who did courses. I will get the titles and feedback on them.
In terms of the area it is extremely badly paid. If you just want to spend time surfing, canoeing, climbing etc you would be better off getting a job in an area that has these and doing the activities on your free time.
If you want to work with kids, being a school teacher pays better and there are good holidays to go off pursuing the outdoors.

I know someone who has her own mountaineering and rock climbing training business here. She trained in Liverpool, and from the little I've talked to her about it, the choice of courses over in the UK is far wider than it is here. Her website is http://janecarneyinstruction.com/ .. she's contactable by email, and I'm sure she'd be willing to give you some pointers .. tell her Alun sent you :)

There are a number of professional outdoor instructor courses in the country.
Castlebar IT runs a degree course. Tralee IT does Health & Leisure degree. .there's a FAs course (at least FAS used to run it) in South Kerry. Colaiste dhulaigh in coolock run a 3 year course and there's lots more!!!
