Did anyone watch The Thirsty Traveller on Sky travel last night?

He went to England in search of Mead, that old brew drunk by druids and lots of other people as far back as 5000BC.

Seems like it's a simple mix of Honey, water and yeast flavoured with whatever you like. Some he tried was made with 1lb Honey and a bottle of wine topped up to a gallon with water and then yeast added.

Think I may give that a go sometime! :)

A basic mead is quite easy to make, but it does require patience, as honey ferments very slowly.

I made it once or twice, but it was years ago. Beer is ready to drink much quicker, so that's where my attention went.

Some good information can be found here: http://hbd.org/brewery/library/beeslees.html but Kirin Iciban is really the man to talk to, abut this.

You could try a Cyser (cider mead) with a little more apple juice and less honey (0.5-1.25 pound of honey per gallons of juice). This will mature much faster that a Cyser, although you will be still looking at a couple of months. Happy brewing!
