All the items in my sent items folder seem to have vanished. They are not in my deleted items and they are not archived (nor did it prompt to archive), anyone got any thoughts as to where they could be?

Need a bit more information first. What version of Outlook are you using? Operating system of your computer? Are you using a pop3 email account or accessing an exchange server?
