Help finding winter holiday destination - Budget €1000

Hi, I am hoping that someone can help me.
I want to book a 1 week holiday, for 2 people, with a view to taking it in January 2007.

I don’t actually mind where the holiday is to, I am open to suggestions – it can be a sun holiday (pool and bar) or something a little off the beaten track. Only thing I definitely don’t want is a sports adventure holiday.

I have a max budget of €1000 to spend, but if at all possible, would prefer to keep it at around €700/€850.

My friend has mentioned having an interest in Prague AND Dubai, so if anyone knows of a way I can make it to one of those destinations, whilst staying within my budget, that would be brilliant!

Now, up until now I have only ever done the summer, 2 week, package holiday deal – and I am a little unsure of what I am doing, to be honest.

Can anyone suggest some possible destinations, and also the best place to get some good value deals?
