    Just smash lots of garlic with a pinch of rock salt and a glug of olive oil, you can make it a little more mayonaisse like if you wish but this should be sufficient for the normal one.

    <edit> I checked it out actually and this is the standard recipe, if you add egg it makes it provencal style. An easy way to make that would be to smash about 5 big cloves of garlic with a pinch of rock salt and about a tablespoon of olive oil, you could do it with a hand blender or even better a mortar and pestle.
