A quick look over your log, I can't see anything really. Its a beta, things like that are going to happen try to uninstall and reinstall perhaps. IE7 didn't work for me either.

I'd try removing a lot of the stuff you have, there's a lot of things there that interact with IE (google toolbars, acrohlpr, spybot's plugin thingy, extra buttons etc), chances are one of them is not compatible with IE7 yet and is causing it to crash on opening.

First off uninstall IE7 Beta 3.

Now disable Google desktop or just uninstall it along with the toolbar for the time being till you get IE7 working.

Also Norton anti virus is a trouble some application frankly I would highly recommend ditching it and use one of the better & free AV scanners like AVG or Avast.

With those changes made download the new IE7 Release Candidate 1 which just came out today and install that, now see it if runs. If it does then try re-installing Google desktop and see how it goes from there.
