can anyone give me any tips how to cook crab claws so they just melt off the bone? anytime I do them they are very dry and they take ages to strip the meat off. I want them like the way the restaurants do them.

We used to boil the crab in a broth, then seperate the claws, store them in the fridge, then sauté them lightly in some garlic butter for serving.

Plenty of salt in the water is a must, otherwise they don't taste as good.

Personally I'd steam them to avoid that dryness you're talking about. It's possible you've been overcooking them?
