So recently I have been doing a bit of restaurant work, kitchen porter, that sorta stuff. Well anyway I have been doing a few different things lately with food. The head chef was showing me how to make roast potatoes and chips in the fryer. I was watching him and paying attention and all that, but I just can't remember how long he said to leave them in for. Im not back in till next week sometime, but I just can't remember how long he told me to leave them in for. I want to know because I will probablly be doing it again during the week. I trust ye god people of boards to steer me in the right direction.

no problem, if you want them a little darker you watch them on the surface, but be careful they can appear ok until you take them out, so soon after they float to the surface then hop them out.
