This may be a stoopid thought but would anyone know if I could buy an Apple Laptop from USA and buy a cable/plug here and just use that ? or would I just be wasting a couple of grand.

Yuo could do that I reckon no problem as I bought a mac mini in the states and just needed to buy the ol travel adapter for us - uk pins and it worked fine. The power brick itself can alternate between the two voltages of the two countries ie 120v and 240v
