I have heard of a program called Total Recorder (it encodes your stuff to mp3 also) but I haven't tried it because I wouldn't have any use for it.

Audacity is the software your looking for, brilliant it will record anything you can hear through your speakers or from Microphones, Telephones etc. Brilliant little tool and it will encode in MP3, WAV and Ogg Vorbis. It's Brilliant and free ot download and use.
