i'm finding it hard to get summer work, most jobs i've heard anything positive from were either telesales or too far away. i've been offered quite a few interviews but once they hear i'm returning to college in mid september they tell me its a 6 - 12 month contract. i'm getting desperate at this point that i'm actually considering signing a contract.

whats the worst that could happen if i signed a 6 month contract and handed in my resignation after two and a half months?

Dont tell them you are going back to college, say you are taking a year off or somthing. Then when you are handing in your notice say that you really good results and you have decided to go back to finish your course. They will be fine with that. No one will hire you if you say you can only stay for 7-8weeks, you will hardly be trained up by that time. There is nothing they can do if you break the contract
