Well there might be an easier way of doing as it's not something I've done but I do know of a method. Which is to use DG Index which will split off the AC3 selected audio track into a .wav which you can convert into anything else.

First off you need DVD Decrypter & DG Index [both free]

Start DVD Decrypter and switch to IFO mode click the stream processing tab and make a note of the English audio tracks position [often number 1, video doesn’t count], now decrypt the DVD. When finished start DGIndex go to File->Open and select all the .vob files, a new window and click ok.

From the menu select Audio->Output Method->Decode AC3 track To WAV and in the Track Number section select the track you made note of was the English one. Now click File->Save Project give it a name & wait for DGIndex to do its thing it will say finished in the window to the right after its done then close DGIndex.

You should be left with a bunch of files in the save location folder one of which should be the .wav

I'm sure there are easier ways to this but that method above is really a process for doing something else but it does what you want to I think.

Besweet is quality. belight is a nice user friendly frontend for it. Google ftw.

DVD Decryper, Then DGIndex to pull the audio track, then BeSweet encode it

If you only want a small sample you could simply play the DVD and used Audacity to record "What you hear".
