Simple, there are only a few numbers that you can choose, and they all have the same symbol.

its an educated guess. there are only a few options because, e.g:

    4+1=5 41-5=36
    4+2=6 42-6=36
    4+3=7 42-7=36

    5+1=6 51-6=45
    5+2=7 52-7=45

so the answer will always be a multiple of 9. it just picks a random multiple of 9 and hopes for the best. try picking the same number twice and see if it guesses

Also if you look at the example given 23, 2+3=5, 23-5=18
watch the symbol change after the number 18 each time you try again, this is the symbol that will appear in the circle........

    LOL

The symbols move around too and the same symbold cover the few numbers you will end up with

yep, its just based on the fact that whatever your answer is, it will be a multiple of nine.
once oyu have assertained that, you just make sure all the multiples of nine are the same symbol, and you show that in the ball.

of course, until i figured that out, i was truely amazed and i believed that the interweb was psychic!
