If you're going to spend time in South America, you have to visit Peru. Spent 6 weeks there 2 years ago and loved every minute. Cusco, Puerto Maldonado, Arequipa, Lima, all gems - even Lima which gets a rough ride in just about every travelbook. Lots to do and see, people are lovely and friendly and there's a nice backpacker culture over there.

One tip though, try and pick up some Spanish before you go. You'll manage perfectly well without it but you'll appreciate the culture and people way more with a basic grasp of their language.

Chile is only high-altitude if you go up into the mountains. Granted Santiago is at 500m elevation but it's not like you're looking over the edge of a cliff or anything.
