Can anyone provide me with pointers as to the wiring I should put in place or would wireless technologies facilitate networking, audio video streaming…

Wireless would suffice but you may as well run some cat 5e.
Use CT100 for TV satellite cable.

Search for posts bt patrido on this site for good tips.
Put 3 coax cable runs from your main TV point to the attic.
