If I have 2 jobs do my employers have to know about each other? How does it work when I go to pay tax and prsi?

As long as you are working legaly there should be no issue.
The two employers do not need to know about each other unless they are coenciding with the hours you are working with another.

You should provide a pps number and a p45 to your employer, they will then sent that to the tax office who then put u down for working for that company. What is the standard amount of hours u work a week?

but presumably from what you say above it's not possible to be registered in two employers simultaneously?

You can be registered with multiple employers, no problems at all.
