I know Aiden Brooks is Fighting he 97kgs approx, another fighter is from Galway and apparently holds Irish heavyweight full contact title (not sure what the title actually is) third fighter I think is from Kilkenny

I think I heard something about Peter Foley running a K1 show. Two things strike me, one as far as I know Paul Hennessey hasn't sanctioned any "official" K1 shows here and even more surprising is Peter Foley running it as his guys (and Paddy or Paul from Bridgestone will testify) NEVER fight with leg kicks let alone knees. Maybe its K1 under kickboxing rules!

The K-1 schedule doesn't mention anything about a show in Ireland. For now I'll take an "I'll believe it when I see it." approach.

Sparta. Who is the fighter from Kilkenny? The only Kickboxers in Kilkenny that I know of are from Kilkenny Top Pro/Euro Gym and they are Full-Contact Kickboxers. Unless there is a big secret ThaiBoxing Gym in Kilkenny that I am not aware of.

The show you are talking about is being run by Pete Foley of Galway Black Dragon Kickboxing. Its an 8 man heavyweight tournament happening in Galway on the 28th of May. It is NOT a K1 event though the rules are similar to K1, but exclude knees to the head. Inside and outside leg kicks are allowed as are spinning back fists and knees to the leg and body.

Some fighters have confirmed entry already including Aidan Brooks mentioned above, Chris Dowling Irish WKA Heavyweight champion and some others including a Norwegian fighter whose name escapes me.
Also worth mentioning is the purse for the winner is 1000 euro!

I presume you are referring to the lack of leg kicks in standard kickboxing rules which two of the three guys above usually fight in.
The norwegian guy has a good few thai fights under his belt afaik so he should be better practiced at throwing low kicks. Still the black dragon guys have a good standard and should pick up the leg kicking better than most.
