when u have a song selected you can either drag the album art onto the little screen in the bottom left corner of iTunes or else right click the song, go to get info and then click on album art.

iTunes for me fairly flies through the songs... u could have the encoder set up to record wav maybe????

go to Edit->Preferences->Advanced->importing and make sure its on mp3
