Ridge Racer!
Great arcade-y feel to it, if you like that sort of thing of course. Good soundtrack too. No problems with the graphics either.

You won't be disappointed!

Avoid Toca 2

its a poor port, the psp can not run it properly, you can feel the frame rate suffer when theres a few cars on track

I would pick Ridge Racer,

Why?!? Well I was playing it in GameStop and it seems to be one-hell of a game. The graphics the speed and the handling are great!
I didn't play it in multi-player yet but I say that it's even better in it.

I will give it *****, excellent & well worth your while.

Need For Speed Most Wanted - Good game

Burnout Legends - Great fun

WRC - err...can't say I like this all that much...its just not as good as Colin McRae imo

Ridge Racer - Good...but after the graphics, it becomes very tiresome, its still definitely worthy of being in anyones collection though.

I've got Wipeout Pure already - love it! Will look into Colin McRae also today

Not really a car game but Wipeout is the best racer I've played on PSP.
