Not a clue how this works but am I allowed/able to get a H/D on an old PS2 and copy games I already own so that my kids can play the same game(s) on that PS2 and a new PS2 they have, at the same time? If so how I do I go about it?

AFAIK, you'd need two copies of each game to do that legally.
