 ??? I know they exist, but what's the point? 'just put in your max bid.

    (1) If anybody bids over your max, you don't get burned

and (2) if your prob is someone outbidding you by €1/£1 in the last 30 secs of the auction, see (1) above ;)

By not bidding till the last second it stops the auction newbies from upping their max bid over and over (which happens ALOT). Getting into a bidding war on eBay is never the cleverest thing to do :-)

I use jbidwatcher which is great, and cross-platform (cos its written in java).

You don't get burned but you may have gotten it way cheaper. It has happened to me lots of times. I have sniped a fair few times manually and got great deals. people tend to get caught up in bidding wars. i have seen people paying £46 for items which have a buy it now of £35 from the exact same retailer, he even had ads for it beside where you bid. If there are no bids on an item many people also tend to avoid it more so it is best to bid later. The other guy may have entered a price of say 30 and when your max goes above it he may reconsider his max. many dont understand the way ebay proxy works and bid like in a real auction.

Bidnapper -> http://www.bidnapper.com/ , free trial and always wins ..and best of all no software needs installing..have recommended it to several people and they have won their bid's everytime (i won mine too) tho never was arsed to buy the service after the trial ran out as it was a few bits and peices i only wanted :).
If its a once off purchase or are looking to buy a bunch of stuff in a short time..this really does work.
