Contract wonderings

I am currently in a short term job until I go back to college (end of sept), the thing is, they think I am there for good (or the forseeable future).

The plan was to hold onto the job for about a month and a half, then say 'got accepted to a course cos someone dropped out, gonna take it' or something along those lines. I would work my notice (a week, two, whatever), and be looking for a PT job to jump into all the way.

I had thought that if a job offer comes soon, i will work as much notice as I can, but wont be too pushed about just quitting, im not there long enough for a reference, and I have no plans to touch the place ever again (or anything like it).
Today I got handed my contract, all seems fine, except for one thing. During probation you need to work 1 months notice, and after that 3 months (which is by far the longest Ive ever heard of). There is little chance of me working 1 months notice, unless I stick there until the end of september (which I hope not to).

if a job were to be offered to me, and I was expected to start, within, say a week, what could be the ramifications of not working the full notice i agreed to in the contract? Could they dock wages? Sue? Or would they just be pissy and intend of giving me a bad reference?
I'm gonna put off signing it for as long as I can, but I dont know how hard theyll press me to sign it....

anyone know where I stand? I'm anxious about breaking contacts, pretending I love my job and want to stay forever is one thing, signing a legally binding document to do so is another..:d
