I generally like going to places in September as they're not too crowded - the resort areas are still open but not packed. I've found that the third week in September is when resorts tend to go a bit dead. The last few years I've gone to Kos, Malta and Turkey in the first/second week of September. Kos was unlucky in that we had a complete waste of space in the apartment next door who was on his first holiday away and eventually was asked to leave the apartment block because of his behaviour. Couple that with four days of pouring rain and a boyfriend with bad holiday tummy and you'll understand why it wasn't the greatest holiday. Malta I absolutely loved and it's too hot to go in July August but September is quite nice. Lots to do, and cheap as well - it also is a place where 'real' people live and work so it's not like a holiday resort and so there is something to do/see if the weather is poor. Totally different but equally good was Bitez in Turkey, again quite hot and very friendly and good value. A week would be plenty there but I think Budget Travel do a Greece/Turkey two centre job for 2 weeks.
Finally travel agents get their specials on a Monday so try and see then!
