It should melt using the techniques that you are describing. The fact that you say it goes "crumbly" suggests that you might be exposing it to too much heat. In the bowl over a pot of boiling water, make sure the bowl isn't actually sitting in the water, that only the steam heats the bowl. IT will take time to melt it this way. Short bursts in the microwave with a tiny bit of butter/water will also melt it. Short bursts though, and stir in between each one, you don't want to curdle the chocolate

Its generally best to break up teh chocolate in to squares and then add milk to it. The heat it whatever way you want but stir it every now and then. Careful that when you are microwaving it that the milk doesn't rise out of the container that the chocolate is in.

Two of my nieces are alwayz eating that scrumptious Dairy Milk stuff, but they have to heat it first for some reason:confused: They put it in the microwave and it alwayz melts for them. They don't break it up into pieces first, they chuck it in whole.

Remember that when you cook/heat food in a microwave, it continues to cook, after you remove it from the Microwave. So, if melting something like chocolate in a microwave,, you should firstly add a splash of milk (will help to melt the chocolate, and prevent it from solidifying)leave it on high for something like 30 seconds, then remove it, try and stir it, and then only microwave it for 20 second bursts, stirring each time, and resisting the urge to lick the spoon!

If it does go crumbly, it is still revivable. Add a little milk, and work it into the crumbly mixture! Reheat (a little) if necessary...
