    As already said, it's oxidation and should be fine as long as it's not horribly stinky or anything :)

    Make sure mince is always thoroughly cooked.
    There could be bacteria on it that if not cooked through is going to cause an unpleasant time.
    The likes of Steak for example only need to cooked each side as that's the only parts that will have been exposed to harmful bacteria.

    If it's gone off, it would have a disgustingly sweet aroma of rotting flesh.....

    Can't bate a hape of salty fried mince loaded with ketchup after a feed of midweek beer :D
