Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    Yes I think buttermilk would do. Just watch as you add so the mixture isn't too runny.

    Hi Wurly. I registered just to tell you I made these last night and they were a hit! Great simple recipe. Gonna try them sans the extra sugar and replacing the jam with lemon curd next (with a little zest thrown into the cake mixture too). Cheers! :D

    Made 6 with strawberry jam and 6 with Lidl's choc hazelnut spread.
    I didn't dust them with sugar, but did provide a plate of cinnamon sugar on the side for whoever wants to roll their doughnuts into it (ehhh, turned out it was just me heheh:D).
    The ones with jam looked like yorkshire puddings for some reason, and the fillings in the hazelnut spread ones sank, as you can see.
    Delicious none the less. And mad easy & quick!

    Just made these for the first time this evening after seeing the recent thread bump. Slightly overdone as I took my eye off them but they still taste delicious. The jam - raspberry & pomegranate - stayed at the top too - result! Thanks Wurly!

    Made these this evening to bring in to work tomorrow! They're beautiful and so simple I'll be making them very frequently I'd imagine! Gorgeous texture too.

    I adapted my recipe and got them down to 229 cals a muffin! Not bad at all! :D

    Well it's basically the same! :P

    Only I used Weightwatchers strawberry jam (100g of it) and stork block of marg instead of butter. Less sugar on the top, just a sprinkling. I had baked them in muffin cases so they didn't need to be rolled in sugar.

    They were amaze.

    Gone in 60 seconds in the staffroom today!

    Wow! This is my first ever cooking club recipe to try and if there'll all as good as this, it won't be the last. Was a bit worried about the soggy bottom so only put in half a teaspoon of jam, but think I'll be putting in more next time. Not sure I can stop after eating one though!

    These are delicious! So light and the texture is perfect. Will be making them again no doubt! Might even try some variations like curd or Nutella!

    This popped up on the front page newsfeed earlier so I made them too! Only issue was I had no muffin tins so I made fairy cakes instead. A bit more finicky but they are little jammy sugary bites of deliciousness.
