They can be shot down, they are just harder to intercept, and in a mass attack it's very difficult to catch everything.
Some will get through depending on how big Iran's attack is, and others will be let through if it's calculated they'll land somewhere relatively harmless.
I mean you saw it last year when Iran launched hundreds of ballistic missiles and drones at Tel Aviv. Considering the scale of the attack, negligible damage was done in the context of what was fired.
Do you think that would be remotely possible if Israel didn't have a sophisticated and functional air defense system?
Again, air defence systems are designed to intercept and minimise damage as much as is practically possible, there's no aerial defense system in the world that can guarantee an airtight net.

Because only 3 countries have developed hypersonic missile technology so it is impossible to make a defence system if you do not have that technology yourself to test it against.

The fact some people are cheerleading Iran is pretty insane. The biggest enemy and threat to Europe right now is Russia, Iran have been supplying Russia with weapons for their war in Ukraine. A world without the barbarian Iranian regime would be much better. Russia losing an important supporter would be most welcome.
