Like, presumably Ukrainian pilots will need upskilling on all those options - but what's the best balance of availability vs. training? Presumably the Mirage 2000 is easier to get to grips with than the hyper technological Eurofighter, right?

Russia's invasion of Ukraine is a complete failure (Both Tactically and Strategically)
They've failed to take Ukraine after 2 years, The NATO alliance now with Finland and Sweden onboards is stronger than ever before, Russia now shares a huge border with NATO, Russian losses in terms of equipment and personnel have been very heavy, The Russian economy is in decline, not to mention all the Wagner messing that went on last year. It's been an absolute disaster for Vladimir Putin, like it couldn't have gone worse than it has.
I'm guessing the president will have an accident this year at some point. I genuinely believe this summer is the last roll of the dice for the Russian invasion. It is highly likely Europe will send more military aid to Ukraine in the event Donald Trump is elected and refuses to back them.

Think quite a bit will depend on how the Europeans deal with this aid this year. Election year and all that will entail with the Americans. Next year could have a different mindset with regards their military aid. Even in the event of a Trump victory, if the Russians are on the back-foot, could imagine the military aid increasing from the US. On the other hand if the Europeans under-deliver and the Russians are swarming over the Dnipro come November, there will be some very difficult decisions.

I was extremely skeptical when this was announced. Just the sheer cost of over 500k shells to be raised independent of any EU funding. I am gladly mistaken. Multiple countries pitched in over 100 million each. I'm glad they stepped up.

There are many in Europe who are annoyed this is going on so long, particularly countries that share a border with Ukraine. It's going on to long, and I think they will do more stepping in, in the months to come. I would not at all be surprised if boots end up on the ground in Ukraine, to just get it over and done with.
Russia has so much to lose at this point. Historically, (for the most part) any country that has launched an invasion into another country and lost (pushed back, without ever having been able to take meaningful full control) is doomed.
Off the top of my head:
North Korea -> South Korea
Somalia -> Ethiopia
Argentina -> Falklands
The above aggressor countries are among the most screwed countries on the planet.
Russia could be next on the list.
