He wont get a fair trial in France. If there was enough evidence to support that he is guilty the DPP would have proceeded with a trial here in Ireland.
Well there's only one way to prove your assertion that he wouldn't get a fair trial in France. And that's to let it proceed, let the prosecution argue their case and let Bailey's legal team defend. We're talking France, a civilised state with a much longer history of running a judicial system that we have, not Afghanistan and North Korea.

Miscarriages of justice happen all the time in civilised countries, especially to non-citizens. Or someone of the wrong sort, easily scapegoated - such as the Dreyfuss affair in France, and the terrible crimes of the Vichy regime (and yes you are the one who brought their history of running a judicial system into this).
The French don't care they claim an illegal right to prosecute someone for a crime that happened in Ireland, as if they care about giving someone in that situation a fair trial.

I agree that is the consensus here but I am not on board with it. As stated earlier I think a hired killer is most likely to be Norn Irish, ex-IRA or UVF, not the sophisticated French hitman many imagine. Sophie put up more fight than expected and the job was messier than expected. To carry the battered body 200 yards back to the cottage would leave forensics and blood everywhere. An Irish paramilitary would know the cops wouldn't be up to much anyway. With regard to the extreme violence, that is what these people do. To feign a burglary, why risk going into the house and leaving forensics there? To use a gun would be alert neighbours. Perhaps a knife was used and perhaps the block was used to obliterate evidence of this.

So are you suggesting that he had planned in advance to kill/disable her with whatever weapon he had brought and then bash her over the head with a block dozens of times? Do you think that's how professional killers normally operate?
Not necessarily saying drag the body back to the house, just put it in a ditch or behind a bush or something that would conceal it a bit from anyone passing by.
You see, this term 'professional killer' can be misleading. Sure, there are some sophisticated planners hired by organisations, but the average run of the mill murderer for money is a Neanderthal underworld gangster who happens to be experienced at murdering people. Extreme violence is not something they shy from. To kill an unarmed petite woman living alone in an isolated cottage? What weapon would you need? Perhaps some cord to strangle her. As I said in the original post, perhaps she put up way more of a fight than expected and it got messy.

If she was shot a hitman would be assumed straight away drawing attention to the husband. Making it look like she was the victim of a rage fuelled random attack could be the perfect way to get away with murder. In my opinion the location of the murder or the method used does not rule out a hitman.
The other issue with that is how does he lure her outside? How likely is it that a woman living on her own in a remote area is going to come out of her house in the small hours to investigate someone making a racket in her front garden or whatever? Even if she does, is it not likely that she will have first called the guards/a neighbour with a shotgun/whoever?
She was battered to death and her skull then crushed with a large block. The first question that comes to mind is who could have had such hate and rage against her personally.
If it was a bargain basement cowboy contract killer, the only way you could make it look like it wasn't a killing for personal reasons would be to break in at night, kill the person while they are asleep and stage a burglary. A burglar with a knife would have it all over within a minute, then a couple more minutes trashing the place and taking valuables.
Hobnail MacFist decided it would be better to chase her across open country and smash her face in with a stone, ensuring the gardai would be looking directly at someone with any motive to see her dead.

If it was a hired killer the only real suspect would be her husband. Her husband was on the phone to her late that night. Instructions could have been given.
Hobnail MacFist very well could have planned it to look like a burglery but it didnt work out that way - he could have got more than he planned for. Sophie could have fought back and ran. Maybe he had to chase her and kill her any way he could in the end and grabbed the block. Once she was dead at the gate there was no point hanging around and going back to the cottage to make it look like a burglary. I guess we'll never know because the Irish were not aloud to look into Daniel Toscan Du Plantier ( close friend of Chirac remember. ). They could have assumed that a messy murder ( just before christmas hols) could throw the stupid Irish off the trail. But theres no convincing you Moonunit is there.

She was alerted to someone outside well in advance. Hobnail MacFist has already messed this up before he even got there since there was no sign of an attempted break in. Maybe Hobnail drove a Harley Davidson.
If a hired killer was serious, they are hardly expecting to lure a woman alone in a remote house outside during the night. If they saw a light on and knew they had been heard they would be gone, sure wouldn't Daniel have told them she has a phone right beside the bed to raise the alarm?
