Good substitute for sunflower oil in muffin recipe

    I want to try out this recipe for mincemeat muffins:

    The recipe uses sunflower oil which I don't have. I do have vegetable oil, light olive oil and real butter. Which would be the best substitute? I'm thinking butter would be best for flavour, but would it work in place of an oil?

    I'm not much of a baker so any advice would be appreciated. :)

    Vegetable oil will be fine. Mincemeat Muffins, yum! :)

    Thanks very much, veg oil it is then. They sound delicious, don't they? Aldi actually have quite a good range of Christmas recipes on their site at the moment.

    extra light olive oil is said to be the most flavourless oil which is readily available.

    I never would have guessed that before trying it.
