What is your signature dish?

Every time I watch a cooking show or competition, the contestants or celebrity chefs always have a signature dish that they know like the back of their hand. It's their "I can make this beautifully without thinking" dish.

My grandmothers beef stew served with fresh homemade brown bread is mine.

Veggie chilli.

Ohhh my recipe is the shít.

It's quite versatile too, can serve it in wraps/tacos, with rice, or just in a big bowl by itself. Goes with salsa, guacamole, hummus, cheese etc, and meat eaters can mix some bacon bits or whatever through it.

I make a nice big pot of it whenever I have company over, and everyone loves it.

Salsa, Corn Salsa, Guacc. Buffalo Humm. S/C Humm., White bean dip, black bean dip, Spinach dip, mint dips, pina colada dip, smashed chick pea dip, lemon juice tartare, Just DIPS

Did I mention dips?

Plain Lamb or Goat curry with Pilau Rice and make sure there is enough left over for breakfast.

Paramite Pie

I've a few dishes I can whip up of the top of me head,

Cajun spice (my own mix) chicken, bacon & prawns stir fry with a white wine & cream sauce. Served with pasta (and veg). Yum!:D

Chilli Con Carne ; a classic and easy to remember.

Fajitas sauce made with pineapple juice, chicken stock & tomato puree. Not from a recipe, just my own concoction and I never measure. Standard mexican seasoning on the meat/veg and then this simple sauce.

Oyaku Don ; chicken & scallions/leeks cooked in some sake, with a seaweed broth & raw(ish) egg sauce served over a bowl of rice. Drizzle a bit of sesame oil & soy sauce over.

Yeah I made a paste once (turned out amazing!) but it's not something I'd do frequently. Kept for a lot longer than the store bought one though..

Tagliatelli with Puttanesca sauce (lit. Whores sauce). Cheap, quick and easy to make. Low calorie as well. Home made pasta if possible.
