It's mostly only the Great Houses that have them - even the Lannisters didn't have a Valyrian sword of their own until they melted Ned Stark's sword down into two swords, and they're (or were) the wealthiest family in the kingdom. If I recall correctly, the dagger that was used in the murder attempt on Bran Start was Valyrian steel - that's what made it so unusual and easy to trace. So they're out there, for sure, but few and far between since any such weapons are in existence since before the dragons all died out. I can't remember them going into much detail about who has them, though.
