Went for a hot sauce Friday treat again today, hash browns and chicken dippers, used these three sauces.

Made the sauces today.
Both were fermented with garlic. The red had some red fruits jam and cider vinegar added. The green had ginger and lime juice added. A little xantham gum went in both. I didn't heat the sauce this time so we'll see how it keeps.

Finally opened these. Very nice, particularly the Samson.
Not bad at all, for a supermarket sauce (lacks in the complexity of small batch).
Thickish, very smokey and sweet, nice kick, but nothing too extreme for us.

I keep the ones that have a lot of salt and vinegar out of the fridge, but sweeter, vegetable based ones, I keep in the fridge.
That's the big question, do you keep ketchup in the fridge or not, we keep all opened sauces in the fridge, but that's just our household. it doesn't affect the heat in the hot sauce. 😵
I have about 1 kg or red and green jalapeños fermenting. Will make probably a red and green sauce with most of them. Maybe leave a few as sliced fermented chillies.
Why the fridge? Do you think they will go off if you leave them out?
I know, I still have 2 of them in the fridge at home, the 300 and the 500 probably bring them in Friday to remind ourselves how hot they are. but they do have a nice flavour. but they are hot..

Flying Goose Brand regular Sriracha is way too sweet, imo. I won't risk any of their products now.
Has anyone tried green sriracha? Is it hotter and less sweet than the red variety?
My favourite very hot green sauce is still East End, with its fresh kick of ginger juice and 42% habanero, but very hot it is! If you like the blistering mouth burn and head sweats… ;)

Did you get them.? We tried them at break time this morning, chicken nuggets and very hot hot sauce, the half million one was hot, very hot, but tasty. we will look for hotter. if you like tasty hot sauce, I recommend these.
We have an air fryer in the canteen, so we bring in cocktail sausages or chicken nuggets. Glass of milk on standby. 🥵

I get them for a Friday treat at work, a couple of like minded lads and myself, love to see how hot we can go, so far we've reach 300,000 Scoville units, but they have a lovely taste, next week we have up too 500'000 Scoville unit ones
Lidl has been stocking them the last few weeks. I wonder if these do well would Lidl sell the rest of the Blackfire range?
