While I appreciate it may not have been going to Israel, from the Houthi/Palestinian/Irani pov any ship carrying jet fuel through the Red Sea just now might well look dodgy. AFAIK it is unusual for refined oil products to be transported long distances by tanker owing to the dangers involved, and a belligerent party might well consider that refined fuel travelling through the Red Sea could easily be diverted to Israel.
As you know the ship wasn't going to Israel you clearly also know where it was going - maybe you'd like to share that information?
Nearly every ship hit so far has nothing to do with Israel, it would be news worthy if they actually git one that was.

The vast, vast majority of everything travelling through the Red Sea is going nowhere near Israel.
