simmering away since 3:30, another 90 mins or so should do. Quite interestingly tinned, fresh or sieved tomato passata doesnβt come into the equation here.. itβs entirely tomato paste & white wine (plus some stock) to make the sauce! Never made it this way before but so far.. wow.

Homeside here, after clearing up the last bits of stuff left over from cooking lunch. Taking things easy now, just about to get a coffee, grab some stollen bites, and plop down in front of the TV.
