I want to make a cake for someone with an egg allergy. Does anyone here have a tried & tested egg-less cake recipe by any chance? I'm fine with making a frosting for the middle so looking for any kind of sponge really.
The only thing I can suggest is to replace the egg with whipped aquafaba to make the sponge.
Or apple sauce, whichever is easier to find. 😂
I'm sure a tin of chickpeas isn't too hard to find, it's just the water they're kept in. Mind you, just ensure you're not buying a garlic or a tomato version... it would make for a very "creative" version of a cake... :D

Some nice BBQ stuff in Lidl this morning……racks, holders utensils etc etc. Picked up a rectangular/ square folding rack thingy for fish veg and the likes. Well made.

Do you reckon Easy Singles kept in the fridge actually have a use-by date? I mean, I realise there's one on the pack - it's rubbed off - but an actual date where they go bad?
I have a pack in my fridge that I kept after a Scout camp back in 2020 (long story, suffice to say I'm keeping them to throw at someone in a few years). I was making burgers at the weekend and was tempted to just use one. I didn't in the end but still. They look and smell fine.
What do people reckon?

Ah I wasn't really looking for serious advice, given it's plasticky shite. More curiousity than anything else.
I think I'll keep it. Another few years and it might be suitable for my purposes.

Surely, if were not allowed to say, "it's grand, eat it", likewise, we shouldn't be allowed to say, "throw it out"?
They are both food advice. One encourages risky behaviour, the other encourages food waste. Some consistency on this rule would be nice!
"It's grand, eat it" could lead to people getting food poisoning following this advise. "If in doubt, throw it out" will not. It's really as simple as that. We don't want people in hospital or worse because of advise they received on this forum.

These days I prefer to use a mix of Mutti passata and fresh plum/vine tomatoes instead of canned. Seems nicer, and less of that bitter edge.

Rule of thumb for canned tomatoes is that they need about a scant teaspoon of sugar per can to offset the bitterness. Have you not been adding it?
Generally not, I like the tang, but I usually just simmer them for longer. Depends on the tomatoes I guess, and depends on what I am making, but Mutti passata is very good.
I would use canned when I don't have good fresh tomatoes.
Yeah, properly ripe, in-season fresh can't be beaten. But canned are yer only man in winter. I always buy whole ones and blitz them in the mini chopper, the quality compared to chopped is night and day.
Totally agree! I never buy chopped. They have that calcium chloride in them to keep the pieces from breaking down, which looks weird to me. Mini choppers are great things!
