I use Vitos double fermented recipe too and it is indeed a wet dough. In another video on pizza problems he says if it is too sticky to work then make it into a big ball, wipe olive oil on it and then cover it air tight in cling film on the worktop and leave at room temperature for an hour. Ive used that advice and it works, somehow after an hour the dough ends up a lot smoother and much easier to handle.
I have 1/3 of 1kg left of Caputo flour. I was thinking of mixing this with some plain flower I have left over. Has anyone ever mixed pizza flour with plain flour?

So I'd love to know why ye all rave about Caputo Blue, everytime I've used it it turns out very slack, where Caputo Red and Odlums Strong perform perfectly.
Odlums strong combined with some Erin semolina is a good mix in my experience.
Are you proving for a long time or just a few hours? I know caputo red is supposed to be for longer proves
For years I have used the Molino 00 flour from Little Italy and last time I bought the 25kg bag of Blue Caputo in a cash and carry. You could taste a Naples pizza using it. For my last cook I tried the 1kg red Caputo from Supervalue and I thought it was the best result I ever had. I always do at least 48 hours ferment and I am not sure what constitutes a long ferment but the red Caputo gave a crispier lighter dough that I preferred.
Yeah, I'm a min 24h bulk and another 24h shaped ferment. The caputo blue gives a very tender crust when you can wrangle it but the red gives a fabulously chewy, bubbly crust and it's very easy to handle.
Where is everyone sourcing caputo as Supervalu dont have it anymore ! I am gutted not to stock up when they had it.

There is no way to get free shipping from Amazon.de unless the seller offers it to Ireland which is rare. Prime doesnt work on Amazon.de unless you have a German or Austrian address. There is a Parcel Motel like service in Germany called https://www.mailboxde.com/ but I think by the time you have paid them their fee and to ship it onwards it is not worth it. I had a delivery charge of 25 from Germany last month, ran it through them and their cost was 28 so I didnt use it. it depends on the size & weight of the item though so it might be worth getting a quote to see if it is cheaper.
But in general if you buy from Germany you have to suck up delivery charges in my experience.
I doubt it unless it becomes available from UK. Italian Amazon has dropped it in price but not for a while. The average price on the German listing is €92, so €85ish delivers it Ireland is a very good price. It's much higher before shipping is included, elsewhere.
My only gripe would be that it currently doesn't ship until late May, so you might not get it until 30th. But the price including delivery is good.
I have 2 questions if people could help.
Those G3 Ferrari ovens will come with a European 2 pin plug. What would be the safest adapter? These things pull a lot of power so would want to be pretty safe.
Anyone got any tips on making pizza dough balls? I can make the dough but I'm terrible at then making balls, they never come out right.
Best option would be to replace with a decent 3 pin plug.

With the ooni, do people leave them outside for summer months with cover on or store them in sheds between uses? Just trying to decide whether to buy the cover....
Finally I presume there are no great prospects of ooni sales or discounts this side of black Friday? Saw a few pages back links to German sites etc but signing up to German parcel motels etc seems a bit of a faff

Yeah I would get the cover, either Oonis one or a backpack cover as suggested. I have mine covered all the time when not in use to keep it looking well. Without it over time the sun would likely fade the black coating on it (talking about the Koda model here). Even if another model its better to have a cover and for a bird sh1t on that than it is for them to sh1t on the actual oven.
I cant remember them having a summer sale before and its doubtful they would in the season they shift most product. Over on the Ooni thread in Bargain Alerts a poster there signed up to the Ooni newsletter and that promised a 10% off code. It didnt arrive so they contacted Ooni customer service who then gave them the 10% code. Id say that is your best bet unless someone here has a referral code from buying an Ooni before, I think they are 15% off.

I have the Koda on that table and sitting on my patio. It's protected by a wall and by the overhang from the roof above, but rain does hit it.
The cover keeps the oven bone dry.
The table is designed for outdoor use but it may be useful to add an extra layer of varnish on.
If you prefer to pick one up in Ireland then The Outdoor Scene in Goatstown, Dublin sell them.

Jones Garden Centre in Donabate had one Koda 12 left when I was there last week. Not sure if it's still there but it might be worth a phone call to ask if they'd discount it as it's the display model.
