I think the concern is that the world could be a lot scarier for everyone if a cornered Russia decides to lash out. And once that genie is let out of the bottle I'm not sure how easily it gets put back in.
It also needs to be emphasised that NATO's remit and sole purpose is the defence of NATO countries. A vastly weakened Russia both militarily and economically at the cost of simply arming Ukraine with some relatively cheap infantry weapons is a pretty clear win for NATO unless there's some geopolitical benefit to a strong Russia which I'm missing right now. I think it would be naive to think that doesn't form a sizable chunk of their calculus.
