I signed up via the UK website not through their app. As another user suggested pick a UK address, like your parcel motel one or google a hotel or even the address of the Tesco store itself. When you key in the post code it will offer you a list of addresses in that post code. Pick one. You can make up a phone number, just use the local prefix.
Use your own email address and they will send you an email with your clubcard number on it. I then downloaded an app called stocard and added it to the app. I just keyed in the number in stocard and it generated a bar code. My brother did the same and both of us used it in May without any issues.

On your iPhone, switch your App Store country to U.K. This will let you download the U.K. Clubcard App and the App itself has the QR / Barcode that you need to scan to avail of the club card prices up there.
If you can find a 'suitable' postcode and address in NI to put down it'll work. Or I think you can pick up a clubcard in store up there.

Couldn't get these in store or on click and collect but Aldi had them for €5.99 so worked out in the end

Dunno if it's applicable to everyone but I am getting 5% Cashback with Revolut on Tesco purchases. It applies to every purchase including alcohol, fags and lotto tickets. Hope that doesn't make sound like a smoking alcoholic gambling addict.
