Did you end up moving to Waterford Luca? I'd be very interested to hear about your experience! I've also been thinking about moving to Waterford, for similar reasons (scenic area, affordable, enough of a 'city' vibe, easy to get to Cork airport / Dublin / ferry).
Steer well clear of the dunmore road full of toffs with notions, i rented there for a few year when i was younger 2004 and god what a horrible community
