The exchanges that have FIAT pairs will typically only have BTC/FIAT pairs or maybe ETH/FIAT pairs, so you still have to get rid of your MagicBeans before you can make a withdrawal. I'd guess they operate FIAT wallets in a similar enough manner, so they're not actually left holding large amounts of even the bigger crypto coins.
