Just wondering what is the absolutely correct procedure for this during the driving test?

Is it best to wait behind stationary vehicle, e.g. lorry, and let oncoming traffic past, or if there is enough space for you and the oncoming car, etc. and it is safe to do so, is it considered okay to overtake the lorry?

    It's situational.

It's hard to go wrong with this. But...

or if there is enough space for you and the oncoming car, etc. and it is safe to do so, is it considered okay to overtake the lorry?

IF IT IS SAFE. This is correct.
