I'm gonna be 100% honest, Gaisce was never something I wanted to do and was basically forced to do it. If I sign it myself and not actually do it, is there anyway my PAL could find out?

No, not really. Just don't use the signatures of teachers in the school. Make up a name. For example, how is your PAL supposed to know if your cycling/chess/piano/karate tutor/instructor is called John O'Toole or not?
