My mum is getting her first car, she is on my dads insurance as a second driver could she get her insurance put on the new car just for a day?

Depends on the policy terms but the general rule is that if your dad is the main policy holder and your mam is a named driver on his policy then your dad would have to transfer his insurance over to the new car temporarily for the day before she would be insured to drive it during that period of time.
