Share your guacamole recipes!

    I made guacamole recently by blending:

    an avocado,
    a tomato,
    a squeeze of lemon juice,
    a sprinkling of cayenne pepper.

    It was ok but not great, maybe I should use less tomato next time. Does anyone have recipes that guarantee nice guacamole, though?

    I love guacamole!
    This is how I have made it before. Be careful with the lime.

    Two large avocados (greensish and a bit soft). Cut in half, get rid of the stone, scoop out the crap
    Three large cloves of garlic, crushed - throw in with the avocado flesh
    Squeeze one small lime in. Try not to squeeze the bejaysus out of it - if you put too much in you will ruin it
    Throw in half a small onion, chopped very small
    Throw in half a tomato, without skin
    (If you want you can add a bit of cayenne pepper)
    Put into a food processor and blend, then put in fridge for a while

    I would eat it with Tortillas, or carrots and celery when I'm feel like being healthy ;)

    I do pretty much same as above but add in a few jalapeno peppers for a good kick!!
