Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    I'm hungover so needed something quick and easy. Steak, sweet potato mash and cheese cauliflower. Had to have gravy cause I'd no pepper sauce. It was great :)

    Yesterday I did some new dishes. I've owned a set of 3 Chinese clay-pots for years but never used them. After a brief scrub and a long soak in fresh water, the pot was ready to use.

    I made a chicken and rice dish following a Gordon Ramsay recipe that said to cook the dish in the oven (using a casserole dish instead of a clay-pot). Anyway after a lot of faffing about I had a pot full of chicken, raw rice and hot stock in the oven. 30 minutes later I had exactly the same - chicken, raw rice and hot stock. So i resorted to the gas burner. Results were good but a little salty from the marinades.

    Had some lamb neck fillets. Marinated in kecap manis, ginger and garlic paste. Fried to colour then simmered in a coconut stock infused with lemongrass, chilli and galangal for 3 hours until they were tender enough to cut with a spoon.

    Lastly, I braised some park choi and finished with a little soy sauce.

    This bacon & leek risotto (with a cheese swap cos I was out of parmesan but did have a poor, lonely chunk of comte knocking around) with this lemon chicken (but with lots less garlic because my garlic was in rag order. Furry blue bum & lots of sprouts.)

    All was very tasty but just as I went to make risotto I opened a tub of chicken stock that had been in the fridge for a while longer than I remembered and I found a new appetite suppressant. Oh that smell will linger for a while.

    Mmmmm Comte, love it.

    We had an Eddie Rockets delivery this evening and I'd say they're all talking about us since. We had burgers, chips AND wings. :o

    On a low carb thing from tomorrow though for a few weeks so it was like the last supper and a golden opportunity to make an absolute pig of myself.

    Washed down with prosecco.

    Had an Aldi "Simply Bistro" ready meal today as I was super busy- Their Tandoori Chicken with Bombay potatoes...My stomach is churning since I ate it! It wasn't the best at all. I don't think I am actually able to eat ready meals- I always feel eugh after them.

    Much more excited about tomorrow. I have one of four portions of homemade chili (with a generous bit of smoked paprika) defrosting!

And a squeeze of lime before tucking in.
    This was only for one serving. I'm sure you can divide the broth into two portions but I love mine very soupy.

    Friday evening I popped into my local fish shop - they had a deal on whole salmon for 9.99. As I go there often the guy behind the counter offered to cut it up into cutlets....9 cutlets for a tenner! We had salmon cutlets on Friday night! The rest are in the freezer to do the kids.

    Saturday lunchtime was carbonara..I tend to make this most Saturdays. Fresh pasta from a place next to the English Market with lardons, beaten egg and cheese...it's yummy.

    Venison steaks Sat night with roast potatoes...pretty impressed with myself for being able to conjure this up as I had been in the pub for the rugby

    Yesterday was sloppy lasagne. Had the meat in the slow cooker and managed to make the bechemal at 1/2 during the rugby.

    Red enchiladas. Warm corn tortillas stuffed with chicken, diced feta and onion. Topped with a red chili salsa (made of guajillo & cascobel chilis, black peppercorns, clove, salt & Mexican oregano), fried diced carrots & potatoes, a drizzle of sour cream and a little more feta. Delicious and have lots of extra salsa for more enchiladas tomorrow!

    Roast Sea Bream on a bed of thinly sliced potato and fennel, with saffron, toasted pinenuts, tomato and parsley. Steamed broccoli for a bit of greenery.

    Curry Addict's chicken korma with broccoli and basmati rice. Ridiculously, outrageously good. It was one of those dinners where I was genuinely sad when I was finished eating because there was none left.

    We had pork chops and two very different opinions on what to do so Mr Polydactyl had barbecue glazed chops with sweet potato mash (am I the only one who hates this??)

    I went for stuffed baked chops with my first ever Rosti. Made for a very delicious if beige dinner.

    The husband did the cooking tonight, woo woo!

    Chicken and chorizo, fried with peppers, onions and fresh tomatoes, seasoned with lots of garlic, chilli, lime juice, salt and pepper, and tossed with brown rice. It was hot, spicy, warming and delicious.

    Pork satay. A little claggy so i'll loosen up the sauce a lot more next time, probs with some coconut milk. Tasty out though!

    We were so wrecked and grumpy after grocery shopping for lots of healthy food (Aldi East Wall you are a pain both to get to and to be in) that we ended up with take out. Got some surprisingly delicious Singapore noodles. But also got a side order of rage because rice didn't arrive (because of a technical issue with massive-company-take-out-ordering-website.ie) and their live chat tried to say it was because the restaurant wanted to try force people towards paying extra for rice. Now that's a scummy thing to say about a small business when it's absolutely untrue and people stop ordering from places over the smallest things. *complains*

    Last night we had good ol Irish stew.

    Tonight was round roast beef sandwiched in gem lettuce with red onion and mayo. Beef was perfectly pink, cooked at high temperature for 21min and rested in oven for 2.5 hours.

    Mushroom soup with rice. Boy, was it tasty! So tasty that I'm delighted I have it for lunch today, and I have a big pot of it at home too to freeze for the future.



    I didn't use all my mushrooms though. I hope they'll last long enough for me to do something else with them. I don't really fancy having mushrooms for 3 days. Can you freeze risotto?

    Inspired by Bazmo's foodporn of the other day, I made chilli cheese nachos last night as well, using the Hairy Bikers recipe (my favourite). No pics as it didn't look half as good :o But it was delicious!

    It's part of their "Hairy Dieters" cookbook. I usually have it with brown rice...having it with cheesy nachos kind of counter-balances the whole "diet" part of it :pac:

    Made a home-made lasagne from scratch, served with salad and some tiger bread.
    It was delicious and there's no pic now but there's plenty of leftovers so I'll post a pic tomorrow.

    We made pork potstickers/gyoza/fried dumplings last night. So much simpler than I had thought they would be to make (if exactly as time consuming as I thought they would be to fill) and so good. The pork mix smelled so lovely raw that you had to remind yourself not to taste it quite a bit. I could legitimately change my name to Dumpling after I ate so many. (still have about 15 uncooked ones in the freezer for dumpling emergencies though!)

    That blob of red on the fishes tail is sriracha and not ketchup, ketchup probably be a bit odd tasting with these. All though sriracha wasn't great with the filling either

    I do I do, we used The Dumpling Sister's potsticker's recipe :) The pork mix took about 10 minutes to prep and then maybe half an hour/40 mins filling & frying/steaming. We're not particularly fast at it though. Oh - and we bought the wrappers frozen and did not make them, that would be a step to far for lazy me.
