Interesting recipe ideas for a waffle iron

I came across this video the other day and was mind-blown

Today I made a quesadilla breakfast-type thing and it was amazing, so crispy and delicious! I found a few great recipes for making hash browns, as the one in the video wasn't great, and now I'm trying to think of some more interesting ideas to try. Any suggestions? I'm looking for savoury rather than sweet.

I've made brown soda bread waffles (and then covred in jam) and polenta and spud waffles (which go well with chilli). I've been wanting to waffle croissant dough for a while coz the Will It Waffle dude has a fab looking croque madame (http://www.willitwaffle.com/blog/2010/02/10/waffled-croque-madame)

That looks fabulous, and I'm definitely intrigued by the sounds of waffle falafel! I clicked on "Buy the Book" on the website to check the price but it just refreshes the page, gonna have a browse on ebay

Saw this on Saturday Kitchen yesterday and tried it today, the waffles were lovely.

Smoked salmon and chive waffles with black pudding, poached eggs and hollandaise sauce

I love corn bread waffles with chilli. You can also make gram flour waffles as an alternative carb with curry!
