However, the author has said this will not be the case, revealing that, even though he has yet to finish the books, they will end on a “bittersweet” note inspired by the Lord of the Rings.
Full article is here but it really only waffels on more without any more information then the above quote.

So who's going to return home to their version of the "shire"? I can see multiple candidates to be honest, from any of our North land main players (land devastated by the the whites), Kings Landing (our dear eunuch not working things out or Littlefinger) to Dorne (things simply going wrong with their plots) to Tyrion/Jaime/Cersei finding their home burnt down in the war and their land being a wildland / peasant revolt.

Many, therefore, expect the heartless killer that is George RR Martin is going to end the show in a deathly apocalypse unlike anything we’ve seen before.

At this stage, I don't care anymore whether the ending is going to be bittersweet or genocide from fleets of napalm-dropping hot air balloons pulled by undead giant owls.

Less talk, more typing. Finish those books, old man!

Giant owls creating a giant plot hole at the end of a huge story, that takes a massive amount of personal investment to finish, would be far more than "inspired" by the Lord of the Rings.

    It would be plagarism.

Saruman is in control of casterly rock and Tyrion and his merry band of hobbits have to defeat him?

Well there are quite a few potential Saruman's from all the followers of various kings to several factions listed in the book but not the TV series etc. that all could do something along those lines and besides this is GoT; defeating them is more unlikely to being gutted like a fish instead ;)
