    Had a few nice meals over the weekend,
    First up on friday, had miso salmon with a warm green salad and some boiled baby potatoes, marinade for the salmon was miso paste, honey, lime juice, light soy sauce, garlic and ginger! Very nice, goin to try it on chicken drumsticks soon.

    On saturday we had greek meatballs, was sceptical about tryin them as im generally not a mint in cooking fan and these had mint in the meatballs but by golly they were tatsy!

    Yesterday then was roast chicken, bu it was slow roasted with herbs and lemon and garlic for four and half hours while we visited our mammies! It was deliciously moist and the lemony garlicy gravey made from the juices was just devine!!

    No, I was passing through Annascaul.
    I'm not crazy about it!
    You can get Jack Mc Carthy's pudding in The English Market and Bresnan's in Douglas shopping centre.

    244654.jpgDoes not really look like much because of the useless camera, but I made "big mac" style burgers with homemade sweet chilli beef pattys, mexicana cheese, thousand island mayonnaise & shredded lettuce.
    Served with a mixed leaf salad & a chipotle potato salad

    Meatballs & tomato sauce (left over from last nights dinner) in a ciabatta roll with lots of Parmesan and a dash of hot sauce.... Perfect for a miserable Monday evening!

    They were really simple actually.

    Just fry some onion and chopped chorizo sausage on a medium heat until the onion softens and the oil releases from the chorizo. Add a can of drained and washed lentils (I was going to get normal uncooked lentils, but I couldn't get them and I'm glad because the canned variety worked just fine). Continue to cook them until the lentils get soft. Add a splash of cream at the end of cooking, and salt and pepper to taste. They were yummy!

    Roasted a seasoned pork chop along with onion, plus mashed spuds/carrots and gravy.

    Leftover pancake with golden syrup for afters!

    Med rare beef burgers in ciabatta buns with jalapeños, gerkins and franks hot sauce. Jerusalem artichoke, carrot, apple and ginger slaw.
    No pic as they looked rather like previous burgers.
    When my butcher makes burgers daily this good for 85c, I see no point in making my own. They are really tasty and well formed with no fillers. He also does rumpsteak burgers for €2 but I find the cheaper ones taste every bit as good.

    Made a paella and it was delish. Hadn't made it before. I didn't capture it in the picture unfortunately but there were also big fat juicy king prawns in there too

    750g mince beef
    150g streaky bacon
    Tin of tomatos
    1 green pepper (85g)
    1 yellow pepper (85g)
    1 onion (100g)
    1 red chilli
    Chilli & garlic powder to taste.

    Makes 5 servings. Works out at 388 calories, 9g carb, 36g protein, 24g fat

    Then as you can see I just topped with some cheese and sour cream and a drizzle of franks hot sauce.

    Just finished dinner -- made a pot of rich braised venison in red wine and chocolate, along with spring onion and kale colcannon, and parsnip and carrot roasted with mustard and maple glaze.

    No I'm far far far too lazy to put in that kind of effort. There's an asian/indian shop beside me that sells it.

    Made Delia Smith's Beef Wellington tonight for husband and roommates, but it was wolfed down before I could get a photo! They are very kindly letting us stay in their spare room until we emigrate shortly, so I like to cook for them whenever I can (and I love to cook). They have accused me of being a feeder, in jest I hope!

    For dinner tonight I went for a nice simple bowl of veg soup (onion, carrot, broccoli, parsnip and spuds with chicken stock, garlic, salt pepper and a tiny bit of cayenne) with some buttered multi grain wholemeal bread.

    And followed it with an extremely bold but yummy desert.
    Cream tea :D
    Cherry scone, raspberry preserve and Glenilen Farm clotted cream. I bloody love a good cream tea!
